Arrachera® skewers in peanut sauce

Prepare these arrachera skewers with peanut cream and a touch of coconut. The meat is marinated with a mixture of peanut cream, coconut milk, and cardamom, then skewered together with cherry tomatoes and spring onions on bamboo skewers. After frying, serve with additional sauce and garnish with sesame seeds and peanuts. Serve with steamed rice for an exotic and flavorful meal.

    • Refrigerated vacuum grilled veal 1 kg

    Ingredients

    • 800 g Arrachera®
    • 1 cup peanut butter
    • 2 scallions
    • ½ cup coconut milk
    • ¼ tablespoon ground cardamom
    • 8 cherry tomatoes
    • 8 bamboo skewers soaked in water for 10 minutes
    • 1 tablespoon sesame seeds
    • ¼ cup peanuts for garnish
    • 2 tablespoons olive oil

    Preparation

    • Chop the scallions, cut the tails in four.
    • Mix the peanut cream with the coconut milk, cardamom, salt and pepper.
    • Spread half of the above mixture on the Arracheras® and thread them on the bamboo sticks along with the scallion tails and the tomato.
    • Heat 2 tablespoons of olive oil and fry the skewers on both sides.
    • Serve with the rest of the sauce and garnish with the sesame seeds and peanuts. Serve with steamed rice.
